My first job out of college was in the Financial District, and just like everyone else who works there, I quickly learned that Al’s of State Street is a great place to grab lunch. This chicken pesto sandwich recipe is inspired by Al’s, who fed me during some of my most formative years.
Alas, I now work in the suburbs and can no longer venture out at lunchtime for that iconic yellow bagged lunch.
Instead, I make my own version of one of my favorites from Al’s, their chicken pesto sandwich. This chicken pesto sandwich recipe is extremely easy to prepare, involving only 3 steps.
You can easily grill a bunch of chicken at once and have this sandwich meal prepped for an entire week. I personally find that this sandwich is very filling and the grilled chicken is a healthy choice.
All you need is a good ciabatta loaf or rolls, decent pesto, and grilled chicken breast. That’s it! I toast this sandwich in my Sharp Supersteam Oven for 7-8 minutes at 375F, and it’s good to go.
Easy Chicken Pesto Sandwich Recipe
Equipment
- toaster oven
- grill pan
Ingredients
- 1/2 lbs grilled chicken
- 3 tbsp pesto sauce
- 1/5 ciabatta loaf or one roll
Instructions
- Slice 2.5 lbs chicken breast into small pieces, then grill on a grill pan on medium-high heat for 45 minutes.
- Cut your sandwich bread or roll in half and spread 1.5 tbsp pesto on each piece.
- Arrange 1/2 lb of the grilled chicken onto your bread, like pictured, and toast open-faced in your toaster oven for 7-8 minutes at 375F.
